One pan Italian Sausage and Pasta Bake

I like simple. And I like tasty food. This one pan recipe is both!

What kind of Sausage do I use?

I made this recipe with hot Italian sausage, but you can use sweet too. Other good choices are bratwurst, andouille, or polish sausage. This recipe can be made with any sausage you like.

What kind of pasta and cheese go with different sausages?

I used rigatoni in this recipe. Orecchiette or ziti would be great choices too. Flat noodles would be great as well. They’d go perfect with the brats or the polish sausage.

As for cheese, any cheese would work. I used parmesan – a sharp hard cheese, and pecorino romano – a salty, nutty cheese. Swiss cheese would be great with the brats or polish sausage. The andouille would match nicely with some mozzarella and cheddar.

You might want to use an herb that compliments the sausages too. Basil is great with the Italian flavors, but sage or rosemary would be perfect with bratwurst or polish sausage. The andouille pairs well with thyme.

Choose the pasta and cheese on your own tastes. Be creative! Just keep in mind it’s all going into one pan!

Making the One Pan Sausage Bake –

First layer, the pasta. Spread it out evenly in a large casserole pan. Sprinkle with the olive oil and mix it well.

Top it with the onions, garlic and

the tomatoes. Pour the water over the top.

Sprinkle the chopped basil over that.

Next comes the cheese. Spread it evenly over the tomatoes.

Using a sharp knife, make several slits in the sausage on both sides. This will encourage the juices to fall into the pasta and help flavor the sauce.

Lay the sausage on top of the cheese.

Bake at 350 degrees for about 30 minutes. Turn the sausage and bake another 15 minutes.

Let it rest about 10 minutes before serving.

  • 4 - 5 cups cooked pasta

  • 14 oz. can diced tomatoes
  • 1/2 cup chopped onion
  • 2 large cloves garlic - crushed and chopped
  • 1/8 cup water
  • 2 tablespoon chopped basil
  • 1/2 cup parmesan reggiano - grated
  • 1/2 cup pecorino romano - grated
  • 6 - 8 Italian sausage links

Naturally Dyed Easter Eggs

I love the look of rustic and natural. Easter eggs dyed with vegetables and spices have a muted color – and occasionally marbled. Sometimes you get exactly the color you were going for and sometimes you get surprised. Either way, it’s fun to do and the eggs come out beautiful!

The color egg you start with will affect the color you end up with. Brown eggs give a more muted look while white eggs are brighter.

Want to try it yourself? Keep reading and I’ll explain how I did it.

Making the Dye and Dying the Eggs

Start with clean, hard cooked eggs. Make sure they are dry.

Prepare your dyes by boiling the color agent with just a bit of salt.

The longer you boil, the deeper the intensity of the color.

Using a jar or other glass container for each color, add about 1 Tablespoon of white distilled vinegar and two cups of the dye liquid. Add eggs and let sit 10 to 24 hours. The longer they eggs sit, the darker the color becomes. I let mine sit over night – about 10 hours.

Remove the eggs from the liquid

and allow to dry completely. Do not wipe them.

Once they are dry, put a tablespoon or so of vegetable oil in your hand and

gently rub it all over the egg. Let it sit a minute or two, then wipe off with a paper towel. And that’s all there is to it! Beautiful, natural Easter eggs!

Here are the colors:

Red – they say beets make red. I found them to be more purple. Raspberries made a nice reddish pink. Other options include hibiscus flower, elderberries, cherries or sumac berries. I’ve read that avocado will dye things red, but I’ve never tried it and I’m not sure what the chemistry of it is.

Blue – purple cabbage. Dried black beans are also a blue.

Yellow – Turmeric (1 Tablespoon of powder or the root)

Orange – yellow onion skins.

Purple – grape juice (or beets)

Green – Spinach

Whatever you choose to dye your eggs with, be absolutely sure it is food grade and not poisonous. Some of the things used to dye fabrics may be natural but are toxic and should not be used on eggs.

So get out your veggies, boil some eggs and have fun experimenting with naturally dyed Easter eggs.

What a crazy week!! We’ve been wildly busy – the sun was out – and got to work in my yard. Our two ponds out back both need work before we can get them up and running – and we need to get them up and running before we get too much heat –  don’t want skeeters. 

We worked until 1:30am to catch two feral cats to be neuters (we got one) –  And we spent yesterday taking and picking up the one we caught – and trying to catch up on sleep. We had to get up at 5:30am to get to the appointment on time. I was so tired I didn’t even eat!

SO needless to say, I’m behind on everything else. Working on my summer routine. I need some easy dinners! What are you’re dinner ideas?

Easy Spicy Shrimp

We love shrimp – any way you serve it. I bought some cooked shrimp by mistake from the freezer section. I thought it was raw. So what to do besides shrimp cocktails? This dish was so easy and came out delicious!

Marinating the Shrimp

I wasn’t sure how cooked shrimp would absorb the flavors, but it came out perfect!

Place the shrimp in a bowl and top with all the spices.

Stir in the olive oil, making sure each piece is well coated. Cover and refrigerate for 2 to 3 hours.

If you are using raw shrimp, only marinate for an hour.

Making the Easy Spicy Shrimp

Heat the ghee and 1 Tablespoon olive oil in a heavy skillet over medium high heat. You can substitute European butter for the ghee. It has a much lower water content, or make your own clarified butter [29].

Add the green onions and cook just until they are starting to get soft. Push to the side.

Place the shrimp in the hot skillet

and cook until it’s hot, about 5 to 6 minutes. Stir in the lemon juice.

Mix it all together and serve over hot orzo or rice.

Easy Spicy Shrimp

Just mix, refrigerate, then cook. This recipe is so easy and so delicious.

  • 3 cups cooked and peeled shrimp
  • 1/3 cup PLUS 1 Tablespoon olive oil
  • 1 Tablespoon smoked paprika
  • 2 Tablespoons chili powder
  • 1 Tablespoon lemon pepper
  • 1 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/4 cup ghee (clarified butter) you can substitute European butter which has a much lower moisture content
  • 4 large green onions, cut into 1-1/2 inch pieces
  • 1 Tablespoon fresh lemon juice
Instructions
  1. Place the shrimp in a bowl and top with all the spices.

  2. Stir in the olive oil, making sure each piece is well coated. Cover and refrigerate for 2 to 3 hours.
