Bacon Wrapped Deep Fried Oysters

Tomorrow is Oyster day! (Not to be confused with National Oyster day which is August 5th) I love oysters – raw, cooked, and in between! And who doesn’t like bacon? Put them together and you have one really delicious appetizer.

How to Do it:

Remove the oysters from the jar and dry on paper towels. Cut the large ones in half. They should be about 1 ½ inches wide.

Heat the oil for deep frying

Mix the spices with the bread crumbs in a shallow bowl. In another shallow bowl, beat the egg with the milk. Use one more shallow bowl for the flour.

Dredge the oysters in the flour. Next, dip into the egg mixture, then cover with seasoned bread crumbs.

Wrap each coated oyster with a slice of bacon that is secured with a toothpick.

Using a basket or tongs, carefully drop each oyster into the hot oil. Fry for about 5 to 10 minutes, until the outside is brown and the bacon is crisp.

Drain – I use coffee filters, but paper towels work well too.

Serve with ranch dressing to dip

Makes about 6-8 appetizers.
