Curried Cauliflower Steaks

I’m on a cauliflower kick.

I love the stuff! Eat it raw with blue cheese dressing, chopped in a salad and now, as a sliced delight!

This beautiful cluster of white goodness is low in calories and rich in fiber. It’s a good source of vitamin C and contains phytonutrients that are known to help prevent cancer and diabetes. They also have anti-inflammatory properties and above all else, they simply taste good!

What you need:

  • One head of cauliflower
  • 1 Tablespoon curry powder
  • ½ teaspoon garlic salt
  • 1 teaspoon lemon pepper
  • 1 Tablespoon olive oil plus 1 teaspoon
  • Greens and grape tomatoes (I used arugula)

How to Do it:

Carefully cut the head of cauliflower into slices about ¼ to ½ inch thick. Save all the little pieces that fall of for other recipes.

Toss the slices very gently with 1 teaspoon of olive oil. Coat each slice on both sides with the curry, salt and pepper.

Heat the olive oil in a skillet and quickly sear each side of the cauliflower slices, cooking until it is just barely fork tender.

Remove from the heat and serve with greens and grape tomatoes.

Its great hot or cold!

Serves 3-4 people.
