Duck Dinner

We love duck at our house, but we don’t have it very often. It’s pretty spendy for a small yield, but it’s so delicious! And it’s really pretty easy to do.

Here’s How to Do it:

Start by patting the duck dry inside and out. Drizzle with some olive oil.

Rub it with the salt, pepper and garlic – inside and out.

Preheat the oven to 425°. Bake breast side up for about 20 minutes. Then, reduce heat to 325°.

Skin the beets with a vegetable peeler and sprinkle with olive oil and salt.

Wash and dry the potatoes and place them and the beets in the pan with the duck.

Tent the bird with foil and bake with the vegetables for about another hour.

Remove the duck and allow to rest. Cut the beets into chunks and heat some gravy! Carve and serve!

  • 1 2 to 3 pound whole duck
  • 2 cloves garlic, crushed
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 4-5 Tablespoons olive oil
  • 4 potatoes
  • 4 beets

  3. Preheat the oven to 425°. Bake the duck, breast side up for about 20 minutes. Then, reduce heat to 325°.

  4. Skin the beets with a vegetable peeler and sprinkle with olive oil and salt.

  5. Wash and dry the potatoes and place them and the beets in the pan with the duck.

  6. Tent the bird with foil and bake with the vegetables for about another hour.

  7. Remove the duck and allow to rest. Carve and serve!
