Easy Sausage Sandwich (Low fat!)

I love those sausage sandwiches with all the onions and peppers.  But I don’t like all the fat of the traditional pork and I don’t like the massive amount of bread from the rolls – you taste more bread than filling!  So I came up with this plan:

What you need:

  • 4 small hoagie shaped rolls
  • 4  Chicken Italian sausage (I used Open Nature – great flavor, very low-fat)
  • 3 Fire roasted red peppers
  • 1 onion, sliced
  • ½ of a can of diced, fire roasted tomatoes
  • 1 Tablespoon olive oil
  • 2 cloves of garlic, crushed.

How to Do it:

Heat the olive oil in a large skillet on medium heat.  Add the sausage and cook until browned on the outside and fully cooked on the inside.  Remove from the heat and set aside.

Add the onion and cook on medium until the onion is soft and begins to get lightly browned.  Add the garlic and cook another 1 to 2 minutes.

Stir in the tomatoes and loosen the bits of browned sausage and vegetables from the bottom of the pan.

Cut the peppers into short strips, about ½ to ¾ inch wide.  Add to the onion and tomato mixture.

Simmer until the liquid is reduced and the sauce is thickened.  Return the sausage to the pan and heat through.

Remove the center of the rolls so they are semi hollowed out.

Place one sausage into the crevice

And top with the vegetables –

Serve hot!

Makes 4 sandwiches
