Perfect little bites of egg – great for a buffet or to serve as a light breakfast. I had three with some coffee – more protein and less sugar than a pastry.
Pop them in the freezer to use as needed – and they make great breakfasts for on the road! (You know, those days when you run out of time and need to get to work??)
What you need:
- 3 eggs
- 2 teaspoons light sour cream
- Pinch of salt and a pinch of pepper
- 2 Tablespoons each:
- diced red pepper
- chopped green onion
- shredded cheddar
- 12 mini fillo cups
- Cooking Spray
How to Do it:
Spray a cookie sheet lightly with cooking spray.
Whisk the eggs with the sour cream, salt and pepper.
Set the fillo cups on a board and place equal amounts of the pepper, onion and cheese in each.
Carefully spoon the egg mixture into each cups until it is gone.
Carefully move them to the cookie sheet.
Baked in a preheated, 350 degree oven for about 15 minutes, or until the egg is set.
Remove from the oven and serve hot, or cool and freeze for later. Reheat in the over or microwave.
Makes 12 cups, perfect for a brunch buffet!
Each serving of 2 cups is 84 calories, 5.3g of fat, & 3.9g protein – if you’re on weight watchers like me, they are 1 point each!
