Banana Nut Waffles

What do you do with bananas that are starting to get over-ripe. You can freeze them to use at another time (and then forget about them like I did), you can make banana nut bread, freeze them overnight, then whirl them in the food processor for banana “ice cream” [1] (which would be delightful on these waffles), or you can make a sensational breakfast and serve banana nut WAFFLES!!

These waffle are so easy – and so delicious!

Making Banana Nut Waffles – 

Put everything but the bananas and walnuts in a blender.

Blend on high until everything smooth and creamy.

Next add two bananas (leaving one to slice for the top when serving). Whirl it again. Let some of the bananas stay chunky.

Stir in the walnuts and let sit while the waffle iron heats up.

We always make Belgian waffles. They have deeper holes and hold more good stuff, but you can use any waffle maker.

Pour the batter over the hot waffle maker, using just enough to cover the plate.

Close the iron and let cook several minutes. Be careful not to open too soon. They will stick.

Continue cooking until the batter is gone, keeping the co0ked waffles warm in a warm oven, directly on the grate. Putting it on the grate keeps it from steaming and making the waffle soft or soggy.

When you are finished cooking all the batter, serve with sliced banana and a few walnuts on top. Add some maple syrup and indulge!!

Banana Nut Waffles

Delicious waffles with all the flavors of banana nut bread.

Ingredients
  • 1 cup heavy cream
  • 2 large eggs
  • 1/4 cup softened butter
  • 1/3 cup brown sugar (I used light)
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanila extract
  • 1-1/2 cup Flour
  • 1/8 cup cornstarch (helps make the outside crisp and inside fluffy)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 medium bananas (two for the batter, one for the topping)
  • 1 cup very coarsely chopped walnuts
Instructions

Chocolate Covered Frozen Bananas

I remember when I was a kid and dad would take us to Balboa Island. We’d cross on the ferry and drive down the main street. We always stopped at a little window (that’s the way I saw it) and dad bought us frozen bananas, covered in chocolate and nuts and they tasted so creamy and delicious!

Want to make some of these treats yourself? They are so easy!!

Here’s what you need:

How to Do it:

Peel the bananas and cut them in half. Insert the sticks into the cut side and lay on wax paper or in a plastic container. Place in the freezer and freeze overnight.

Remove the bananas from the freezer and shake the Magic Shell. Lay the bananas on a plate and pour the Magic shell over them. Lift each and continue to cover with the chocolate – one at a time. While the chocolate is still wet, sprinkle it with nuts . It takes about a minute for the chocolate to begin to harden.

Lay the bananas down and serve, or store in an airtight container in the refrigerator.

Makes 4 servings

Banana “Ice Cream”

You craving something sweet and cold?  How about some totally vegan, totally fat free, totally delicious banana ice cream?

How to Do it:

Start with two frozen bananas.

Remove the peel from the frozen banana and break it into pieces.  Put it in a food processor with the vanilla and water.

Process until it is smooth and creamy.

You can also add a little bit of cinnamon!

Mini Parfaits

Small bites are popular these days and for one who is always trying to diet, small desserts are great.  I get a bite and then I move on (most of the time).  This week we’ll share some small bite desserts that taste great, are easy to make and everyone will love!

 Today’s treat:

Mini Parfaits [11]

What you need for 4 2” parfait cups (cups are dessert wine glasses or large shot glasses)

How to Do it:

Strawberries and Cream:

Cut the berries into small chunks and sprinkle with sugar.  Allow to sit for about 15 minutes.

Layer the berries with the whipping cream in each glass.  Top with whipped cream and a berry slice to garnish.

Coconut Banana:

Starting with a small amount of whipped cream, layer the bananas, coconut and cream until the glass is filled.

another small amount of whipped cream and the toasted coconut.

Note:  to toast the coconut, put it in a hot, dry pan.  Shake the pan over medium high heat until ti begins to brown.  Remove from the heat immediately.

S’Mores:

Place about 1 teaspoon of crushed graham cracker in the bottom of the glass.

Top with 1 teaspoon of marshmallow cream (this is the hard part because it’s really sticky!!).

Squirt a small amount of chocolate and continue to layer.  You can also add a few tiny chocolate chips!

Keep layering until the cup is full.  Top with cream and a tiny sprinkle of graham cracker.

Waffle Day

Did you know that March 25 is Waffle Day?  It all started in Sweden as Våffeldagen.  It historically marks the beginning of Spring and is celebrated by eating a lot of waffles!  So in honor of waffle day – here are a few to tickle your taste buds!

Use a basic buttermilk waffle recipe.  You’ll find one here [30].

And now for the chicken and gravy

What you need for Chicken and Waffles

Making Chicken and Waffles

Pour the buttermilk over the chicken and allow to sit for 1 -2 hours.

Mix the dry ingredients together and dredge the chicken. 20160313-IMG_5393 [31]

Spray a baking dish with cooking spray, then lay out the chicken pieces in a single layer.  Spray the top of the chicken liberally.

Bake at 350 degrees for about 20 to 30 minutes; until the coating is browned and the chicken is cooked though.
Then make the gravy –

Making the Chicken and Waffles Gravy

Brown the flour in the butter, then add the other dry ingredients.  Whisk in the water until the mixture is smooth and thick.  Whisk in the milk adding more if you prefer thinner gravy.

Serve the waffles with the chicken and the gravy –
Makes about 4 servings.

Savory Potato Waffles & Ham

Banana & Chocolate Stuffed Waffles –

And what’s for dessert?  How about banana and chocolate stuffed waffles?

Ingredients for the banana and chocolate stuffed waffles –

Making the stuffed waffles –

Mix the dry ingredients well.  Form a well in the middle and add the wet ingredients (milk, eggs, oil) and mix well.  You will have a thick batter.

Cut the bananas into thin slices. 20160313-IMG_5366 [40]

Spoon a full ladle of batter onto a hot waffle iron.  Place banana slices onto the top of the batter and then close the lid.  waffle [41]

Cook until both sides are brown and crisp.  Remove from iron to a hot plate lined with a paper towel (paper towels will absorb condensation keeping the waffles from getting soggy).

Continue cooking until all the batter is used.

Place more banana slices on the top of the cooked waffle.  I used a Belgian waffle maker that makes huge waffles, so I cut one in half.

Using chocolate syrup, put lines of chocolate over the bananas.  Next, add the whipped cream.  I like a more watery whipped cream, so I used heavy cream with a little sugar and whipped it in my blender.  You can also use aerosol, which is even easier!  Sprinkle with more cinnamon.

Put another waffle on top and add more chocolate, whipped cream and cinnamon.  Serve hot!
