Savory Herbed & Cheesy Waffles – A Perfect Brunch

Are you looking for an easy brunch dish for Easter or Mother’s Day? This one is delicious. A savory waffle [1] with herbs and cheese, topped with an egg and a little herbed Greek yogurt (or sour cream).

And you can make a big batch and freeze them. Heat them up in a toaster or the oven – wonderful.

Here’s How to Do it:

Start by heating the waffle iron. I use a Belgian waffle maker because the holes are deeper. Belgian waffles aren’t all sweet – this one is savory.

Mix the yogurt with 1/4 of the herbs. Set aside.

Next, mix all the dry ingredients into a large bowl using a small whisk.

Stir in the herbs and cheese and coat them with the flour mixture.

Slowly pour in the milk, then the butter and last the egg, whisking to fully blend all the ingredients.

Lightly oil the waffle maker with olive oil on both sides. Pour a full cup of the mixture onto the waffle iron. If you are using a regular iron, use just enough to fill all the irons.

Cook on the iron until it’s crispy and golden brown.

Carefully remove from the iron to an oven-proof plate and keep warm in the oven.  Fry the eggs to your preference. Over-medium or over-easy keeps the yolk runny. When you break it open onto the waffle it’s almost as good as the butter.

Serve the waffles topped with some grated cheese,

melted butter, a fried egg and

a dollop of herbed yogurt. Garnish with a little parsley and crispy fried sage leaves.

Frittata with Crab, Spinach, and Artichokes

What is the difference between a frittata and an omelet?

An omelet is typically made for one. The eggs are folded and may or may not have a filling of some kind and they are cooked over a medium-high heat in butter. On the other hand, a frittata is made for more people. Served open faced, it is generally thicker and cooked slowly, then finished off under the broiler.  And here’s one that will fill your mouth with bursts of joy!

Here’s How to Do it:

Heat the oil in a deep, heavy skillet (about 6 to 8 inches) on low heat.

Whisk the eggs with the cream, tarragon, garlic and salt and some fresh ground pepper. I used a lot.

Gently cook the spinach and artichokes in the oil. Lift the vegetables out and set aside.

Pour the egg mixture into the hot oil and let it set just slightly.

Next, sprinkle the crab, spinach and artichokes over the top.

Cook on low for a couple minutes. As the eggs are starting to set, lay the fresh mozzarella evenly over the top

and cover.

Continue to cook until the eggs are nearly set. Be sure to check it often so the bottom doesn’t burn.

Turn the broiler on and place the pan directly under the heat, cooking for just a few minutes. The top will be lightly browned.

Remove from the heat and serve with hot sauce.

You have probably heard countless people say that breakfast is the most important meal of the day. This is certainly the case and that’s particularly true when you are younger. The right breakfast will ensure that your brain is firing on all cylinders and helping you get through the day. That’s why you need to think carefully about what you eat for breakfast each morning. Here are some of the key possibilities that you should keep in mind.

The Common Choices

One of the classic choices for a breakfast dish is always going to be cereal. It’s quick, it’s easy and it can be quite filling. However, you do need to make sure that you are choosing the right cereal. There are quite a few on the market and they don’t all provide the same benefits. You need to look at the packet and find out exactly what’s in your favorite cereal. This is particularly important for parents. A lot of the cereals that kids devour are packed with junk. 

Arguably, oatmeal [10] is the best choice for those who do like cereal. Since it’s made from ground oats, it does contain a rather unique fiber which is known as beta-glucan. This fiber provides a lot of benefits to the body. It can even reduce levels of cholesterol. Another benefit of eating oats is that they have plenty of antioxidants. These help fight against the impact of oxidation on the body and stop fatty acids in the body from becoming rancid. They can also provide numerous benefits to the heart and may even decrease your blood pressure if it is too high. 

The Healthiest Choices

There are plenty of food options that will be fantastic if you’re looking for a healthy and hearty [11] way to start the day. For instance, you should consider having eggs for breakfast at least once a week. Scramble them and add them to toast or fry them with beans – the choice is yours. If you’re feeling brave, you can even blend them. Studies have shown that eggs provide various benefits and help ensure that you feel full while boosting calorie intake. It also keeps your blood sugar at the right level. 

You might assume that coffee isn’t a great option in terms of healthy choices but this isn’t the case. Coffee is obviously high in caffeine and this has been shown to ensure that people remain more alert while boosting mood and improving mental performance. Even smaller levels of caffeine can trigger the desired impact here. Coffee provides other benefits too. For instance, studies have shown that by drinking coffee, it’s possible to boost the metabolic rate considerably. You might find that drinking coffee does help you burn more fat. You might think that coffee doesn’t match your taste preferences, but perhaps you simply haven’t found the right choice for you. There are lots of different types of coffee including Costa Rican coffee [12], one of my favorites! Rich and smooth. 

You could also think about adding berries to your list of breakfast snacks. Eat these separately or add them to other breakfast choices such as hot or cold cereal for additional levels of flavor. Blueberries, raspberries, and strawberries are all great choices. They include low levels of sugar but have a high level of fiber. Blackberries provide 8 grams of fiber in each cup. And just one cup of berries is less than 90 calories. Berries have even been shown to reduce issues with inflammation so they are a great choice for your breakfast routine as you continue to age.

Unique Choices 

Finally, you might be looking for ways to make your breakfast more interesting and appealing. If so, then there are lots of choices worth considering. For instance, you can think about making some fruit ring pancakes. These are easy to create yourself and if you want to keep them healthy just use whole grain batter. You can find some great recipes for these treats online.

Alternatively, you might want to think about making some quiches for breakfast [13]. Yes, these can be a great breakfast snack and they are easy to make yourself. In fact, you can even make them from toast by being a little creative with some muffin tins.

Tater Tot Breakfast Casserole

Yesterday was National Tater Tot day – and I missed it! BUT I didn’t miss a great tater tot dish!

Tater tots were invented in 1953 by Ore-Ida (Oregon-Idaho). They were made popular by Sonic Drive-thru and they are still going strong. Did you know Americans eat more than 70 million pounds of these wonders?

Well, everyone has had the hamburger tater tot casserole, or some version of it. Here is a really delicious breakfast [17] version. Easy to make and even easier to eat!

Here’s How You Do it:

Preheat the oven to 350°.

First, brown the sausage.

Lightly oil an 8X8 casserole dish, lay half the tater tots on the bottom. Top with half the sausage and 1/3 of the cheese.

Lay down a second layer.

Place the eggs, milk, lemon pepper and garlic salt in a bowl and whisk it all together.

Pour the mixture over the tater tots and top with the remaining cheese.

Next, bake the casserole for about 30 to 40 minutes. The top will be brown and bubbling and the eggs cooked through when it’s done!

Remove from the oven and allow to rest for five to ten minutes.

Serve hot! Make it a meal with a side of fresh fruit.

  • 1 cup shredded cheddar cheese
  • 4 large eggs

Grandma’s Blueberry Kuchen

It’s been a great year for blueberries. I’ve made bread, frozen some, eaten them until I may turn into one!! And then I remembered Grandma’s Kuchen. Kuchen [22] is the German word for cake and Grandma loved to bake. Breads, cakes and many other treats.

Slathered in fresh blueberries and sugar and served hot and steaming, this treat will surely be as big a hit with your family as with ours!

Here’s How to Do it:

To make this kuchen, start by preheating the oven to 350°.

Next, sift together all the dry ingredients. Put the flour, baking powder, salt and 3/4 cup of sugar into a wire strainer and sift the ingredients into a large bowl, making sure they are all blended together.

Add the shortening (I used butter), milk, vanilla and 1/2 teaspoon of grated lemon peel. Beat with an electric mixer on medium speed for three minutes.

Add the egg and

continue to beat for 2 more minutes.

Pour the batter into a greased 8X8X2 inch pan.

Gently stir the blueberries with the remaining sugar and lemon peel.

Spread evenly over the top of the kuchen batter.

Bake for 40 to 45 minutes or until it’s lightly browned.

Allow to cool slightly before cutting into squares and serving this kuchen hot and crumbly and delicious!
