Frozen Strawberry Pops

Nothing says summer like frozen treats out on the deck.  Strawberry season is still going strong around my house – those ever-bearing varieties just keep offering those ruby gems.  So what is better this time of year than to create a frozen and delicious treat from them!

These are so incredibly simple!  And they taste so good I think I’m going to try it with peaches next!  (These are already almost gone!)

What you need – Simple Syrup

What you need – Pops

How to Do it:

First make the simple syrup:

Put sugar in a small saucepan and add the water, then stir to mix

On a medium-high heat, bring to a rolling boil.

Reduce heat to low and simmer, stirring frequently, until the sugar has completely dissolved, then simmer 2-3 minutes more.

Remove from heat and allow to cool 30 to 60 minutes.

Place in a storage container – Makes about 1 cup of simple syrup.

 

Now the pops!

Wash the strawberries and remove the tops.  Place in a blender with the water and simple syrup.  Puree on high until they are well blended-about 2 to 3 minutes.

Pour into popsicle molds and freeze.  If you don’t have molds, paper cups with plastic spoon handles work – or even ice cube trays with toothpicks.

The popsicles will not freeze hard because of the sugar.  They will be somewhat soft and easy to eat right from the freezer – And delicious!!

Makes about 3 ½ cups of strawberry puree.
