Fruit Vinegar – The Flavors of Summer

I love preserving the bounty of the summer here in the Pacific Northwest.  We have so many wonderful berries and stone fruits – fragrant and edible flowers like lavender.  One way is to freeze them, but another way is to make them into fruit flavored vinegar.

Small bottles of a homemade vinegar make great gifts.  Make a label and add some recipes for using them onto the neck of the bottle – and there you have a great gift!

Making them is so easy!!  You just need three ingredients…

What you need:

  • 2 ½ cups fruit
  • 3 Tablespoons sugar
  • 2 cups vinegar** (see below for suggestions)

How to Do it:

Clean the fruit – skins are fine.  Add the fruit, vinegar and sugar to a sauce pan.  Bring it to a boil, then reduce heat and simmer on warm for about 45 minutes.  Remove from heat and allow to cool completely.  NOTE:  You can also use herbs instead of fruit – an ample handful is enough.  I love lavender!

Strain out the fruit and pour into decorative bottles.  You can use the original vinegar bottle, special bottles you’ve purchased (I watch yard sales), even small liquor bottles!

**DO NOT use distilled or cider vinegar.  It’s best to use a white variety such as champagne, white wine, or white balsamic.  I like to use a high quality choice as my base.

 

You can use it in salad dressings, marinades, or anything that you would use a premium vinegar.  I also like to put a Tablespoon into a glass of sparkling water.  It gives it a little flavor and is a great probiotic!
