Grilled Pizza

Super easy, totally homemade pizza – from crust to sauce then grill to mouth!  Delicious!

My husband built a wood fire pizza oven and we love it!  Nothing tastes better than pizza cooked the old-fashioned way.  But if you don’t have a pizza oven, you can do it on a grill or even in your oven – It’s easy! 

What you need:

Put everything into a blender and puree together.  Pour into a small sauce pan and simmer on low until slightly thickened.

How to Do the Pizza:

To make the dough – place the yeast, sugar, ½ teaspoon salt and ¼ cup warm water in a bowl and stir gently.  Let sit until it bubbles.

In a large bowl mix the flour, the remaining salt and water, 2 Tablespoons of oil and the yeast mixture.  Mix until it is incorporated into a ball of semi-soft dough.  Add an additional teaspoon of oil and mix again.

Knead for about 3-5 minutes, either with the hook on the mixer of by hand.  Place the dough in an oiled bowl, cover, and leave in a warm place for about an hour or until the dough is doubled in size.

Punch the dough down, turn and let rise a second time.

Spread the dough out on parchment paper and press and pull until it is the desired thickness.  Spread the remaining olive oil onto the top and sprinkle lightly with sea salt (regular salt works too).

Add toppings of your choice (starting with the sauce and ending with the cheese).

I like to put pepperoni on last because I like it crispy!

Vegetarian – mushrooms, olives, parmesan, pine nuts, tomatoes, peppers, fresh basil, onions and peperocini peppers

Pepperoni! Onions, olives, mushrooms, sausage, tomato sauce, mozzarella, peppers and, Pepperoni!

 

Place in pizza oven or on grill with no pan after the coals are red-hot.  I like to throw a handful of rosemary sprigs into the coals.  If you are using a regular oven, cook at 400 degrees on the bottom shelf.  You can put the rosemary in a pan and place it on the bottom rack while the oven preheats.  When it starts to smoke a little, add some water and move it to the top while the pizza cooks.

Cook for about 15 minutes (less if you are using the wood), until the cheese bubbles and the crust is brown – but be careful, it will burn on the bottom quickly if you don’t watch it!!

Makes one large pizza or 4 small, individual pizza – Serves about 4

 

NOTE:  If cooking in the oven, use either a pizza stone or a vented pan (see below) for even cooking and heat.
