Light Pasta Alfredo with Spinach and Chicken

I love alfredo and I love a simple meal when I get home from a long day at work. This one fits both bills – and it’s not too fattening! I’m on weight watchers so I watch those points. One serving of this dish is only 9 points – 8 if you use fat free milk.  That’s not that bad for a whole meal!

So whip up a batch and enjoy!

What you need:

  • 2 teaspoons of butter
  • 2 Tablespoons light margarine
  • 4 cloves of garlic, crushed
  • ½ pound of cooked chicken skinless chicken breast, chopped
  • 2 Tablespoons flour
  • 1 cup  1% milk
  • 2 cups fresh spinach
  • ¾ cup shredded parmesan
  • 3 cups cooked pasta
  • Salt and pepper to taste

How to Do it:

Melt the butter in a skillet and add the garlic. Cook until it’s fragrant. Melt the margarine then slowly stir in the flour and cook until it starts to brown slightly. Pour in the milk and simmer until it starts to thicken. Stir in the spinach and the chicken.

When the spinach is wilted, toss in in the pasta and stir.

Add the parmesan and mix until it melts – serve hot.

Makes about 4 servings
