I love alfredo and I love a simple meal when I get home from a long day at work. This one fits both bills – and it’s not too fattening! I’m on weight watchers so I watch those points. One serving of this dish is only 9 points – 8 if you use fat free milk. That’s not that bad for a whole meal!
So whip up a batch and enjoy!
How to Do it:
Melt the butter in a skillet and add the garlic. Cook until it’s fragrant. Melt the margarine then slowly stir in the flour and cook until it starts to brown slightly. Pour in the milk and simmer until it starts to thicken. This is your alfredo sauce.
Stir in the spinach and the chicken.
When the spinach is wilted, toss the pasta into the alfredo and stir.
Add the parmesan and mix until it melts – serve hot.
Makes about 4 servings

- 4 cloves garlic, crushed
- 1/2 pound cooked chicken breast (skinless), chopped
- 2 Tablespoons flour
- 1 cup 1% milk
- 2 cups fresh spinach
- 3/4 cup shredded parmesan not canned
- 3 cups cooked pasta
- salt and pepper to taste
