Marinated and Grilled Round Steak

I found some round steak on sale. It’s a fairly inexpensive cut of beef, but can be pretty tough if you don’t slow cook it – like braising it. But we weren’t in the mood for slow cooking, so I decided to give it a little boost.

Putting it in a marinade with an acidic ingredient helps to break down the fibers that make it tough. The salt adds flavor to an otherwise less flavorful piece of meat (it is the fat after all that gives beef its richness). Toss it on the grill and slice it thin and you have a delicious, inexpensive steak dinner on your plate!

How to Do it:

Mix all the ingredients except the steak in a bowl and blend with a wire whisk.

Place the steak in a ziplock bag and pour the marinade over it. Seal tight, letting all the air out. Gently massage the steak. Place in the refrigerator for 24 – 48 hours.

Remove it from the bag and dry it off gently with paper towels. Set in refrigerator, uncovered for about 30 to 45 minutes.

Heat the grill to about 400°. Place steak directly over heat and cook for about 3 minutes on each side, or until desired doneness.

Remove from the grill and let rest for 10 to 15 minutes. Slice across the grain and serve hot!
