Pecan Crusted Salmon Fillets with Chive Oil & Couscous

I love salmon, as you can probably tell from all the recipes for them on the blog! I love it raw, smoked, baked, fried and grilled. It’s such a robust flavored fish that compliments so many different ingredients. Try this one, crusted with pecans, those crispy fried onions (you know, the ones you use on that green bean casserole) and garlic. Baked to perfection and served with couscous and chive oil.

Sound good? Well read on – it’s so easy to make!

How to Do it:

Preheat the oven to 350 degrees.

Place fried onion pieces, pecans, 2 cloves of garlic and 1 Tablespoon olive oil into a food processor.

Next, process until all the ingredients are well blended and chopped.

Remove the mixture and set aside. Rinse the food processor, then add the remaining garlic and 2 Tablespoons of chives, process until garlic is chopped well. Slowly add the remaining oil and process until it is all smooth. Strain the mixture over a mesh strainer.

Dry the salmon fillets on paper towels and add salt and pepper to both sides.

Spread ¼ the pecan mixture on to each side of each fillet.

Bake for 10 to 12 minutes in the oven. Carefully, move the pan to the broiler rack and broil until the tops are crispy brown.

Cook couscous according to package instructions. Mix in remaining chives.

Place the couscous on a plate, then lay a fillet on the top. Drizzle the plate and the salmon with the chive oil. Serve hot!
