Portobello Mushroom Sandwich

Looking for a meat-free sandwich that’s hardy and filling?  Portobello mushrooms fit that bill.  Totally vegetarian and totally delicious!

It’s easy and fast – great for lunch or dinner 

What you need:

  • 1 very large slice of sourdough bread (per person)
  • Cheddar Cheese – sliced (about 1 ounce per person)
  • Red onion, thinly sliced
  • Avocado (about ¼ per person)
  • Mayonnaise (optional)
  • Lettuce
  • A large Portobello mushroom, sliced – about ½ per sandwich
  • Olive oil
  • salt and pepper to taste

 

How to Do it:

Heat some olive oil in a skillet and cook the mushroom slices until they are soft and tender.  I sliced mine in rounds, but you can slice them vertically as well.

You can also use a grill pan or even grill them.  The idea is get them moist and soft and tender.

Cut the bread in half and toast both pieces.

Top with some mayonnaise (Optional), avocado and sliced onion.  Put the cheese on top of that. 

Lay the hot mushroom slices on top of the cheese.  Top with lettuce, close the sandwich and serve!

Delicious!  Goes great with beet or other vegetable chips!

      Oh it was!! My hubby is a carnivore, but I like to skip the meat sometimes. This was as hearty as a burger!
