Potted Pork – A great use of leftovers!

This delicious spread is great on crackers or sliced baguette. It works as a sandwich spread too! A super easy and wonderfully tasteful way to use any left over pork too!

This recipe uses ghee. Ghee is a highly clarified butter that is typically used in Asian and Middle Eastern cuisine and that originated in ancient India. Well, what exactly is clarified butter? It’s butter that has been simmered and all the water removed. Ghee, on the other hand, simmers low and slow allowing the solids to brown slightly giving it a sweet nutty flavor. It also has a higher smoke point than regular butter, allowing to cook at higher temperatures. And it tastes good!

Here’s How to Do it:

First make the spice mixture. Set aside. You can use this blend on vegetables, rice and even in your oatmeal! Just make sure you store it in an airtight container.

Now for the pork! Place 1/4 cup of the ghee, the pork, and all the other ingredients into a food processor.

Process everything on high until it is a smooth and creamy mixture.

Place in a bowl and pour the remaining ghee over the top.

Chill for at least two hours.

Serve cold or at room temperature with crackers or smalls bread rounds. Or, you can do as my husband did. Spread it on bread with some lettuce and avocado and you have a deliciously good sandwich!

Ingredients
  • 1-1/2 cup cooked pork
  • 1/2 cup melted ghee (you can substitute butter)
  • 1/2 teaspoon fresh thyme
  • 1/4 teaspoon fresh, minced garlic
  • 1/4 cup cognac or brandy (optional)
  • pinch sugar
  • salt and pepper to taste
  • 1/8 teaspoon spice mix
Spice mix
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cinnamon
Instructions
  1. Place 1/4 cup of the ghee and all the other ingredients into a food processor.

  3. Place in a bowl and pour the remaining ghee over the top. 

  4. Chill for at least two hours.

  5. Serve cold or at room temperature with crackers or smalls bread rounds. 
Spice Mix
  1. Blend all the ingredients together well. Store in an airtight container.
