Looking for a treat to give mom while you’re fixing her amazing Mother’s Day dinner? Well here are some homemade crackers with a delicious salmon spread. Both are super easy to make and can be made in advance – just remember to bring the spread to room temperature before serving!
The Crackers
What you need:
- 1 cup grated Gouda cheese
- 1/3 cup toasted, salted pecan halves
- 1 ½ Tablespoons all-purpose flour
- 1 Tablespoon water
How to Do it:
Preheat the oven to 375°.
Place everything in a food processor. Process until it is a crumbly dough.
Roll into marble sized circles and place on a clean, lightly greased cookie sheet.
Flatten the rounds.
Bake for about 15 minutes, turn and bake another 10. Watch the closely. If they start to get too brown at the edges, take them out. They will burn quickly.
Remove from the oven and cool. Serve with the salmon spread.
Makes about 18 Crackers.
The Spread
What you need:
- ¼ cup walnut pieces
- 4 oz. smoked salmon (not lox)
- 4 oz. cream cheese at room temperature
- 1 Tablespoon prepared horseradish
- 1 Tablespoon capers
How to Do it:
Place everything except the capers in a food processor.
Process until it is well blended. Place in a large bowl and stir in the capers
Makes about 1 ½ cups of spread
Serve together with the crackers on a serving plate and enjoy!
