Sourdough Cheese Muffins

I am so getting into this sourdough stuff! I think these muffins are my favorite recipe so far! Give them a try, see what you think. They are delicious!

Ingredients for the sourdough muffins –

Instructions – 

Bring the starter to room temperature and let it activate for 6-8 hours.

Mix all the ingredients except the cheese in a large, non-metallic mixing bowl. Cover with plastic wrap and allow to rise in a warm place (like on top of the refrigerator).

When the dough is about ¼ higher than it started (about 4-5 hours), gently stir in the cheese.

Place dough into greased muffin tins to ½ way up the side. Cover with a damp dish towel and let sit for about 30 minutes. Preheat the oven to 350°.

Bake muffins for about 25 – 30 minutes, or until they are brown on top and a toothpick inserted in the top comes out clean.

Serve these hot out of the oven with some butter, or freeze them to eat later. They will store in the refrigerator for about a week, in the freezer 6 to 8 weeks in a freezer bag.

Delicious sourdough with lots of pepper jack cheese throughout.

  • 2 cups flour
  • 1/2 Tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 Tablespoon sugar
  • 1/4 cup canola oil
  • 1 cup sourdough starter
  • 1 large egg
  • 1 cup milk
  • 2 cups shredded pepper jack cheese
