Homemade pizza on a week night? Yes!!
This was sort of by accident. I used some refrigerator pizza dough and it got too warm. It was sticky and wouldn’t spread, so I put it in a casserole dish and made the pizza. It was amazing! We did it again on purpose with different toppings and the result was just as good – so here you go. An almost from scratch pizza you can make on a weeknight!
What you need:
- 1 package refrigerator pizza dough
- ½ cup jarred spaghetti sauce (to which we add more garlic and basil)
- Topping of your choice (I used spinach, onion, olives, pepperoni and a couple of chicken sausages chopped)
- ½ cup shredded mozzarella
- ¼ cup shredded parmesan
How to Do it:
Spray the bottom of an 8X8 baking dish with cooking oil. Lay the dough in the bottom and spread it evenly.
Top with sauce, then the veggies, then the meat
and cheese. Note – pepperoni can go under the cheese but we like it when it gets crispy.
Bake at 425 degrees for about 15-20 minutes, until the crust is brown and the cheese bubbles.
Cut into 8 pieces and allow to cool. Once cool enough, remove to a rack.
Enjoy!
Makes about 4-8 servings
