What a week I’ve had! Besides being a blogger and photographer, I’m a full time director at a child care center. In the last four months our enrollment has doubled and, sadly, we’ve lost a fantastic teacher (she’s heading off to college – good for her!). But that means the rest of us are working hard while more staff is being hired. And, for the leader (that would be me), that means lots of hours to make sure the team gets to go home on time to be with their families.

So, needless to say, the blog has been neglected. To all those amazing cooks who shared and I didn’t get to your post to read it and comment, I apologize! I will get there, just late. And with all that’s been going on, I’ve had to figure out what to eat. And thanks to all of you amazing people, I know…

  4. I hope you get a chance to just sit and relax!! Thank you for hosting! This is what was served during the week 9-9- to 9-13 in my home. On Tuesday morning was Pumpkin Pancakes with Cinnamon Mousse. Wednesday we served a delicious Pumpkin Spiced French Toast Amaretto Sauce. Wrapping up this first pumpkin week in Michigan we enjoyed a No Bake Pumpkin Cheesecake. Enjoy!
