Homemade Pork and Beans

  • 1 1/2 cup dried beans, like pinto or navy
  • 2 slices bacon, chopped
  • 5-6 whole cloves fresh garlic
  • 1 Pork Soup Bone that has some meat on it (I bought a butt roast, cut the meat off for stew, then used the bone and all the meat left on it for the beans)
  • 1 teaspoon garlic salt
  • 2-3 sprigs fresh sage
  • 2-3 sprigs fresh thyme
  • 2-3 sprigs fresh rosemary leaves
  • 1 small to medium yellow onion, chopped
  • 5-6 dried pequin chilis
  • fresh chilis cut into slivers (garnish) like JalapeƱo
  • sour cream (garnish)
  • chive leaves (garnish)
  1. Bring the beans, onions and chilis to a boil. Turn off heat, cover and let sit overnight.

  2. Add the ingredients. Bring it to a boil and let cook for about 20 - 30 minutes. Cover and reduce heat and simmer for about 2 to 3 hours, or until the beans are soft.

  3. Remove the whole herbs and pequins (if you can find them).

  4. Serve garnished with sour cream, chili slivers and fresh chive leaves.

  5. Goes great with garlic pork!
