Nebraska Reuben Sandwich

Who really created the Reuben sandwich? Well, so the story goes... In the 1920s a group of guys would get together to play poker in a hotel in Omaha Nebraska. One night the fellows started to get hungry so they called out to the kitchen manager. He created a sandwich and named it after one of the players, Reuben Kulakofsky. Other stories suggest that Reuben himself created it. Whoever it was, it's good!

Ingredients
  • 8 slices rye bread
  • 3/4 cup sauerkraut
  • 3 Tablespoons Russian dressing
  • 1/3 cup butter (approximately)
  • 2 pounds corned beef, sliced thin
  • 1 pound Emmental Swiss cheese (this is a nutty, rich swiss cheese)
Instructions
  1. Start with the dressing. Mix the sauerkraut and Russian dressing together. Mix well. 

  2. Next, butter the bread. Lay it on a clean surface, butter side down. Lay a stack of corned beef on it. Then a stack of the cheese. Top with the sauerkraut mixture. Top with another slice of bread, butter side up.

  3. Lightly oil a skillet and heat on medium heat. When it's hot, lay the sandwiches on the hot surface. Press down gently with a spatula. Let it brown lightly.

  4. Turn the sandwich, gently press again and brown on the other side. Turn the heat to low and cook until the cheese it melted.

  5. Serve with a big pickle and/or potato chips.
