What to do when you have club sandwich meat and no bread. But you do have tortillas...

Ingredients
  • 4 slices bacon
  • 4 to 6` oz. turkey breast or thigh meat
  • 1 Tablespoon olive oil
  • 1 Tablespoon chili powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper
  • 2 Tablespoons salsa verde
  • 4 small flour tortillas (street taco size) - can also use corn tortillas
  • 1 lime, cut into four wedges
  • 4-5 large radishes, sliced
  • 2-3 large green onions, sliced
Instructions
  1. First, cut the bacon into one inch pieces. Add a little olive oil to a cast iron skillet and cook the bacon. About half way through cooking, add the spices and stir. 

  2. When the bacon is nearly crisped, stir in the turkey breast and cook until it's heated through. Stir in the salsa verde.

  3. Warm some tortillas by laying them on the hot cast iron skillet until they are soft.

  4. Put some meat in the tortillas. 

  5. For garnish, offer radishes, lime wedges, and sliced green onion.
