Have a lot of tomatillos? This dish uses those tasty, tart green fruit broiled on top of a beautiful salmon fillet.
Sprinkle salt and pepper on the flesh side of the fillets - generously salt and pepper the skin side.
Place the oil in the bottom of four single serving baking dish, like a gratin dish. Place one salmon, skin side down in each.
Top each with slices of tomatillo (2 tomatillos each) and sprinkle each with a little more salt and pepper and the minced jalapeño.
Place the dishes on the top rack of the oven and broil until the fish is a delicate pink and flakes with a fork (but is not dry). This will take about 10 minutes depending on the thickness of the fillet.
Serve with chopped cilantro and sliced avocado directly out of the cookware.
