Start by patting the duck dry inside and out. Pour about 2 Tablespoons of olive oil over the skin.
Rub it with the salt, pepper and garlic - inside and out.
Preheat the oven to 425°. Bake the duck, breast side up for about 20 minutes. Then, reduce heat to 325°.
Skin the beets with a vegetable peeler and sprinkle with olive oil and salt.
Wash and dry the potatoes and place them and the beets in the pan with the duck.
Tent the bird with foil and bake with the vegetables for about another hour.
