Virginia Ham and Biscuits

The official breakfast sandwich of Virginia - Buttermilk biscuits stuffed with cheddar and pure Virginia ham.

Ingredients
  • 1 pound sliced ham
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/4 cup melted butter
  • 3/4 cup full fat buttermilk
  • 8 oz sliced cheddar cheese (sharp or extra sharp)
Instructions
  1. Take the ham out of the package and roll it in paper towels to get most of the water out.

  2. Heat the oil in a skillet and start frying up the ham.

  3. Next, make the biscuits. Preheat the oven to 350°.

  4. Sift together the dry ingredients. 

  5. Cut the butter into pieces and cut it into the dry ingredients until it resembles corn meal. 

  6. Stir in the wet ingredients and gently knead until you have a soft dough.

  7. Roll it out to about 1/2 inch thick. Cut into circles with a biscuit cutter or a large glass.

  8. Place on cookie sheets that are covered in parchment paper.

  9.  Bake for about 20 minutes, or until the biscuits are golden brown.

  10. Allow to cool enough to handle. Cut in half and add cheese and a piece of the ham. 

  11. Return to the oven for about 5 minutes to melt the cheese.

  12. Serve hot and enjoy!
