Zucchini – Grilled with Canadian Bacon & Pine Nuts

The last of the summer zucchini are finding their way to my kitchen  – and a gas grill works in any kind of weather!  So throw on some steaks and have a delicious, healthy side dish to go with it!  And no dishes except the plates!

What you need:

  • 4 medium zucchini
  • 4 slices Canadian bacon, chopped
  • 2 Tablespoons olive oil
  • 1 teaspoon garlic salt
  • 2 Tablespoons pine nuts

How to Do it:

First, toast the pine nuts.  Heat a skillet up to high, then reduce to medium.  Add the nuts to the dry pan and cook, shaking constantly to keep from sticking, until the nuts begin to brown and you can smell the aromatics from the nut oils.

Next, cut the zuchs into quarters lengthwise.

Place the squash on a large piece of foil and drizzle evenly with the olive oil and salt.  Top with the Canadian bacon and pine nuts.

Wrap the foil tightly around the zucchini and place on a hot grill over indirect heat.

Cook for about 15 – 20 minutes, or until zucchini is fork tender, but not soft.

Remove from heat and serve immediately!

Serves 4
