Pumpkin Spice Granola

A perfect fall breakfast - all the warm aromas and flavors of fall.

Ingredients
  • 2 cups rolled oats (not instant)
  • 3/4 cup chopped candied pecans (I used Trader joe spicy ones)
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/2 cup canned pumpkin puree (check the label - make sure it's pumpkin and not squash)
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon kosher salt
  • 2/3 cup pure maple syrup
Instructions
  1. Mix all the ingredients together in a large bowl. Make sure everything is evenly coated.

  2. Spread it all out in an even single layer onto a parchment line baking sheet.

  3. Preheat the oven to 325 degrees.

  4. Bake the granola for about 20 minutes, stirring once or twice.

  5. Turn the oven off and let the granola cool in the oven. If you have an electric oven, keep the door ajar. They do not cool as fast as a gas oven.

  6. After it's cooled, put it in an airtight container and store at room temperature for up to 3 months.
