Bacon Jam

An easy to make salty sweet condiment that goes great on many things!

Ingredients
  • 1/2 pound bacon
  • 3/4 cup sweet yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 1/8 cup pure maple syrup
  • 1/8 cup apple cider vinegar
  • 1/8 teaspoon ground cayenne pepper (Optional)
Instructions
  1. Start by cutting the bacon into chunks and frying it until it's crispy. Drain on paper towels or coffee filters. 

  2. Drain off all but about 1 tablespoon of fat. Add the onions and garlic and cook until it is starting to soften. 

  3. Add the brown sugar and cooking, stirring, until the sugar is dissolved.

  4. Add all the remaining ingredients and bring to a boil. Reduce heat and simmer on low until it's thick and jammy, about 45 minutes.

  5. Put in an airtight container and store in the refrigerator for up to a week.
