A delicious cornbread waffle topped with all your favorite taco toppings!
Place all the ingredients except the cheese into a blender. Process on high until all the ingredients are blended.
Add the cheese and process again.
Heat a Belgian waffle iron.
Pour the batter onto the hot iron. Cook until the waffle is golden brown and crisp.
Place in a warm (150°) oven directly on the grate, not a plate.
Continue until all the batter is used.
Serve with taco meat, cheese, lettuce, avocado, cilantro, chopped peppers, onions and anything else you like on tacos! Also good toasted and buttered.
