Simple French Onion Soup

An easy soup with rich beef broth and lots of sweet onions. And it's easy enough to do on a weeknight.

Ingredients
  • 1 large onion, sliced
  • 1 Tablespoon butter
  • 1 quart beef broth
  • 4 thick slices sourdough baguette, lightly toasted
  • 4 large slices Jarlsberg cheese
Instructions
  1. Saute the onions in the butter until they are soft and golden.

  2. Add the beef broth and simmer until it's hot and the flavors meld.

  3. Spoon the soup into four bowls.  Top each bowl with a piece of toasted roll and a slice of cheese.

  4. Put the soup in the broiler until the cheese is melted and bubbly.

  5. Let it cool before serving.
