This American St. Patrick's Day traditional meal is delicious and easy. It takes awhile to cook but so worth the effort.
Rinse the beef and place in a large kettle.
Reduce heat and simmer for about 3-3 ½ hours, until the beef is fork tender.
Cut the potatoes in half and add to the pot.
Turn the heat up to medium and cook until the potatoes are almost done – about 20 minutes, depending on the size of the potatoes.
Cut the cabbage in wedges, the onion in quarters and the carrots in 2-3 inch segments. Add to the pot and continue to cook until everything is very tender, about 15 to 20 more minutes
Remove the beef from the pot and place on a plate to cool slightly. Turn heat up to high and let the liquid boil for about 5 minutes.
Slice the beef and serve with the potatoes and vegetables covered with a bit of the liquid.
