Corned Beef and Cabbage

This American St. Patrick's Day traditional meal is delicious and easy. It takes awhile to cook but so worth the effort.

Ingredients
  • 2-3 pounds packaged corned beef
  • 4-5 small potatoes (like yukon gold or red potatoes)
  • 2-4 medium carrots
  • 1 medium onion
  • 1 small head white cabbage
  • salt and pepper to taste
Instructions
  1. Rinse the beef and place in a large kettle. 

  2. Cover with water (DO NOT add salt!).  Empty seasoning packet that comes in the package and add that to the water.  Cover the pot and bring to a boil.

  3. Reduce heat and simmer for about 3-3 ½ hours, until the beef is fork tender.

  4. Cut the potatoes in half and add to the pot. 

  5. Turn the heat up to medium and cook until the potatoes are almost done – about 20 minutes, depending on the size of the potatoes.

  6. Cut the cabbage in wedges, the onion in quarters and the carrots in 2-3 inch segments.  Add to the pot and continue to cook until everything is very tender, about 15 to 20 more minutes

  7. Remove the beef from the pot and place on a plate to cool slightly.  Turn heat up to high and let the liquid boil for about 5 minutes.

  8. Slice the beef and serve with the potatoes and vegetables covered with a bit of the liquid.
