Red, White and Blue Popsicles

Made with summer berries, a perfect treat for summer parties - and so easy to make!

Ingredients
Red
  • 1-1/2 cup strawberries, washed and cut in half
  • 2 Tablespoons sugar
  • 1/4 cup water
White
  • 1/8 cup sweetened condensed milk (use coconut to make it vegan)
  • 1/3 cup lemonade
Blue
  • 1 cup blueberries
  • 2 Tablespoons sugar
  • 1/4 cup water
Instructions
  1. Start with the red - Bring the strawberries, sugar and water to a boil. Simmer for about five minutes, then remove from the heat to cool.

  2. Once it's cooled off, put it in the blender and puree it all.

  3. Pour to one third of the mold and freeze until nearly solid, an hour or two.

  4. White is Next  - Blend the condensed milk and lemonade together.

  5. Pour into the mold about 2/3 of the way up. Put in the freezer until somewhat solid.

  6. Finally, the blue - As with the strawberries, put everything into a small pan and bring to a boil. Reduce heat and simmer until the berries are popping and the sugar is dissolved, about 4 to 5 minutes.

  7. Remove from the heat and let cool.

  8. Puree in the blender and fill the molds.

  9. Put the sticks and tops on and freeze until solid, at least 24 hours. Then, just push them out and enjoy!!
