Curried Shrimp Bites

Shrimp is such an open canvas for flavors. Curry seems to bring out the sweetness of the shellfish, yet creates a wild party in your mouth at the same time. Yogurt helps to cool the heat while it enhances the rest of the flavors. I dare you to just eat one of these!

Not only are these little treats delicious, they are low in fat and calories. They fill your mouth with so much flavor, you’d never know they weren’t a fatty, decadent treat! Serve them at your next party and see how fast they go.

What you need:

  • 15 filo cups
  • 15 medium shrimp
  • 2 Tablespoons hot curry powder
  • scant pinch of cayenne pepper powder
  • ½ teaspoon salt
  • ½ teaspoon lemon pepper
  • ¾ cup shredded parmesan
  • 3 Tablespoons chopped green onion tops
  • 1/3 cup plain Greek yogurt
  • 1 teaspoon cumin

How to Do it:

Cut the shrimp into small pieces. Mix with curry powder, salt and lemon pepper. Place even amounts into each of the filo cups

Evenly top each with even amounts of parmesan cheese, then green onion.

Bake at 350 degrees for about 10 minutes, or until cheese is melted and edges of cups are browned.

Let cool slightly then top with about 1 teaspoon of yogurt and a sprinkle of cumin.

Serve warm!
