It’s National Corn on the Cob Day!

Corn on the Cob day? Yep. A special day to celebrate that summer treat we all look forward to. Grilled, roasted, or boiled, these golden gems grace our barbecue parties, picnics and dining room tables. So what’s the best way to serve it up?

Well, I say keep it on the cob. It’s the butter that gives it the flair for the party. And here are a five delicious ideas to dress up your corn!

I like to grill or roast the corn still in the husk. If you soak it in warm water for a bit, it helps to steam the corn and keep it moist and juicy. Another delicious method is to remove the husk and cook it up directly on the grill, but watch it. You don’t want to dry it out! Boiling and steaming are other popular methods. And contrary to some reports, corn is good for you! It’s rich in fiber, thiamin, niacin, folic acid and more. There are more than five essential minerals found in corn – and it tastes good!

So keep reading to find some great buttery ideas for your corn.

How to Do it:

All of the recipes are done the same way. Soften about 1/3 cup of unsalted butter to room temperature. Smash it up a bit with a fork, then cut in the flavor ingredients.

Make sure you mix it well. Transfer it to a mold or butter dish and chill for a few hours.

Serve when the corn is steaming!

What you need:

Fire Roasted Pepper and Bacon Butter

  •  2 Tablespoons diced fire roasted red peppers (from the jar)
  • 2 Tablespoons minced cooked bacon
  • Pinch of salt

Cilantro-Serrano-Lime Butter

  • 3 Tablespoons fresh cilantro, chopped fine
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon minced, fresh serrano pepper
  • Pinch of salt

Rosemary Garlic Butter

  • 2 Tablespoons finely minced fresh rosemary
  • 1 teaspoon (or more) of finely minced fresh garlic
  • Pinch of salt

Italian Style Butter

  • 2 Tablespoons minced fresh basil
  • 2 Tablespoons grated parmesan
  • pinch of salt

Goat Cheese & Thyme

  • 3 Tablespoon chevre cheese
  • 2 Tablespoons finely minced thyme
  • pinch of salt

Each one makes enough for about 4 ears of corn (if you’re a butter lover like me!)

You can add chives, sage, cheddar, cotija cheese, olives – the only limit is your imagination!! Have fun and enjoy!
